Fat Fighting Food – Zucchini Lasagna

Zucchini Lasagna is one of the recipe which helps in burning fats fast.


Ingredients:

1 – Zucchini
Tomato puree
2 – Garlic clove
1 cup – Sliced mushrooms
1/4 teaspoon – Salt
1/4 teaspoon – Red pepper flakes
1 and 1/2 teaspoon – Olive oil
2 tablespoon – Shredded mozzarella
Skim ricotta

Preparation:

1. Preheat oven to 400 degrees.

2. To prepare sauce, puree one 14-ounce can whole tomatoes, 1 garlic clove roasted, 1 teaspoon olive oil, 1/4 teaspoon salt and 1/4 teaspoon red pepper flakes.

3. Heat 1/2 teaspoon olive oil in a medium skillet.

4. Cut two 1/2-inch-thick slices lengthwise from a zucchini.

5. Saute the slices with 1 garlic clove minced for 2 minutes on each side, until tender.

6. Saute 1 cup sliced mushrooms with a pinch salt for 3 minutes and keep aside.

7. In baking dish, layer 1/2 cup sauce, 1 slice cooked zucchini, 1/3 cup part-skim ricotta, 1 tablespoon shredded part-skim mozzarella, and mushrooms.

8. Repeat with remaining zucchini slice and bake for 15 minutes.
